1 8oz package of baby bella mushrooms
1 1/2 wedges light Swiss laughing cow cheese
1 tbs 50% less fat real bacon bits
1/8th cup frozen chopped spinach heated
1 tbs shredded parmesean cheese
1) Rinse and take the stems off the mushrooms. Pat mushrooms dry. Place mushrooms in baking dish. I was able to fit 9 in my pan and then used the other 3 for the filling.
2) Chop up the remaining 3 mushrooms, add bacon bits and spinach to
frying pan and heat through till mushrooms are tender. Add in the light
Swiss laughing cow cheese.
3) Stuff mushrooms with
filling. Sprinkle parmesean cheese on top. Bake at 350 for about 10
mins. Then broil till lightly browned on top.
Serves 2 to 3.
