Carrot Cake Waffles









This is an altered THM (Trim Healthy Mama) recipe. The original recipe is the Trim Healthy Pancakes.

Carrot Cake Waffles

1 C old fashioned oats
1 C egg whites
1 C fat free cottage cheese
2 tsp baking powder
2 - 3 tsp Truvia
1 tsp cinnamon
1 tsp allspice
1 tsp nutmeg
1 carrot shredded (roughly less than 1/2 cup)

topping:

1 oz 1/3 less fat cream cheese
2 tbs 0% Greek yogurt (I use Fage)
1 tbs sugar free maple syrup

Place oats in a blender and grind.  Add in egg whites, cottage cheese, spices and carrots.  Blend until well mixed.

In a hot waffle iron sprayed with non stick spray cook until done.

Mix the topping ingredients together and place 1/3 of the mix onto 1/3 of the waffles.  I get 9 waffles with my waffle iron.

1/3 of recipe equals 1 serving.
