Mex Pork Tacos
6 pork chops
2 packets Chi-Chi's restaurant style taco seasoning
2 cups water
1 onion diced
1 tomato diced
flour or corn tortillas
Rice (2 packs Birdseye steam fresh rice & mixed veggie)
1 small can enchilada sauce
1 lime sliced into wedges
optional: salsa, sour cream, cilantro
Brown pork chops in oil, pour in 2 cups water and taco seasoning. Simmer until water is gone about 1 hour.
Cook rice, add in enchilada sauce and heat through.
Slice pork chops thinly and serve on tortillas with lettuce, tomato, onion and cheese. Squeeze some lemon on the pork if desired.
Serve the rice with some cheese melted on top.
