I made the boys and hubby regular ones with rice. I made mine with riced cauliflower!
For 1 bell pepper I used about 1/2 cup cooked riced cauliflower.
1/2 cup tomato sauce/spaghetti sauce. I used left over spaghetti sauce which had ground beef in it from last nights dinner.
Some shredded Italian cheese.
I usually put them all in a baking dish covered with foil and bake at 350 for an hour. We don't like our bell peppers overly cooked. Then remove from oven, take foil off and top with cheese. Return to oven until cheese is melted.
