Pound Cake

Pound Cake

2 cups sugar
1 cup butter, melted
4 large eggs
1 tbs vanilla
3 cups gluten free flour (plus 1tsp xanthan gum if your gf flour does not contain it)
2 tsp baking powder
1 cup milk

Preheat oven to 350

In a large mixing bowl add melted butter and mix in sugar until creamed.
Add in eggs one at a time mixing well.
Mix in vanilla.
Mix baking powder into flour and add to mixture alternating with the milk and mix until well combined.
Pour into 2 greased loaf pans. 
Bake approx. 50 to 55 mins. 
Cool completely.

*If the loafs are cut before cool they end up with more of a cake like texture.  When cooled completely they are more dense like pound cake.

Can be served with strawberries and/or whipped cream or other toppings of your choice.
