French Onion Soup

Friday was an amazing and wonderful day! 

 

French Onion Soup

Onions sliced ( I used 3 red onions, 3 big yellow onions and 3 white onions)
2 containers of beef broth
1 cup red wine
1/2 stick butter
2 cloves garlic
2 bay leaves
1/2 tsp thyme
salt & pepper to taste
Italian shredded cheese
Italian or french bread

Melt butter in pot on medium heat. Add sliced onions and garlic and saute. I might of used a little more than 2 cloves.   Then add broth, wine, bay leaves and thyme.  Simmer for about 30 mins or until onions are tender. Slice bread and toast under the broiler.   Place bread in bowl, top with soup and sprinkle with cheese.
This made enough soup for the 6 of us plus some leftover for lunch the next day.





Most of the time I cook this and only hubby, Noah and I eat it.  This time our other 3 boys tried it and said it was "ok"!




Friday, Jan. 18th, turned out to be a very exciting day for our family!  My husbands brother, Tim, and his wife, Jessie, had their first baby!  Sadie was born at home and delivered by her dad!  Congratulations to Tim and Jessie and welcome to the world baby Sadie!!
