This past weekend we had our fill of very YUMMY food!
We started out on Friday night and made our version of Pioneer Woman's Fajita Nachos. This is one our "go to" meals. We love nachos, tacos, fajitas, quesadillas etc.
I tend to make a double batch of the meat then we can make Quesadillas for lunch or dinner the next day!
Left over cooked marinated steak from the beef fajita nacho recipe.
Shredded Mexican cheese blend.
Corn Tortillas (I use gluten free ones)
Crumble Queso cheese
Put meat and cheese between two corn tortillas and heat in a frying pan until cheese is melted. Use salsa, sour cream and/or guacamole on the side if you like.
After that yummy meal we decided to have Enchiladas for dinner that night!
Mine are made with gluten free corn tortillas.
