Spaghetti Pie (FP)
serves 2- 4
2 packs NoOodles konjac noodles
1/2 C fat free mozzarella cheese
1/4 C parmesan cheese
1/2 C egg whites
Italian seasoning to taste
minced garlic to taste
onion flakes to taste
Rinse konjac noodles under warm water and drain. Heat in dry frying pan for a few minutes until moisture has dried off. Then mix 1/4 C mozzarella cheese, parmesan cheese, egg whites and seasonings with the noodles. Place in small 6x6 baking dish and press down. Top with the rest of the mozzarella cheese Bake for about 15-20 minutes in 350 degree preheated oven.
You can top with the sauce of your choice and serve with a nice side salad!
Notes~ When my mother-in-law makes it she sometimes adds ricotta cheese. You could also use 2 large eggs instead of the egg whites.
Spaghetti Sauce
1 (15oz) can tomato sauce (no added sugar)
1 tbs tomato paste (no added sugar)
1/2 lb extra lean ground beef
1 small onion diced
1 clove garlic minced
salt & pepper to taste
Italian seasoning to taste
Brown beef. I always drain and rinse my beef after it's browned. Add onions and seasonings. Cook until onions are tender. Add tomato sauce and paste. Heat through. I cooked it about 15 minutes on low.

There is another recipe on Gwen's Nest that reminded me of my mother-in-laws spaghetti pie. Although my mother-in-law uses regular spaghetti noodles and sometimes adds ricotta cheese to hers! But to be on plan with THM you would need to use Dreamfields low carb pasta or Konjac Noodles.
