Oven Fried Pork Chops & Scalloped Potatoes

Oven Fried Pork Chops

6 pork chops
1 c gluten free panko crumbs
1 c parm cheese
1 1/2 tsp Italian seasoning
1/2 tsp garlic powder
salt & pepper to taste
2 eggs
1/4 c mayo

Preheat oven to 450
In a dish combine bread crumbs, cheese, salt, pepper, garlic, and Italian seasoning.  In another dish combine eggs and mayo mix well.
Spray pan with non stick cooking spray.
Dip chops in egg mixture then in bread crumb mixture place on a baking pan.
Bake at 450 for 15 mins per side. Finish under the broiler for 2 to 3 mins.



Scalloped Potatoes

3 tbs flour
3 tbs butter
6 c milk

4 lbs of potatoes rinsed and thinly sliced.
1 onion finely minced
salt & pepper

Make a white sauce by melting 3 tbs butter in a pot, whisk in  flour then whisk in milk.  Keep whisking on med-high heat until thickened. Salt & Pepper to taste.

Put potatoes & onion  in a 9x13 baking pan. Pour white sauce over and mix it in.  Bake at 350 for 1 1/2 hrs.





The pork chops were cooked to perfection!  Moist and tasty!!

Our front yard is flooding from the snow and ice melting plus all the rain we've gotten so far today.  We are expecting thunderstorms tomorrow with a high of 57!  57 degrees in Michigan at the end of January!!  I'm just hoping it doesn't turn out like it did last year in March.  We had warm weather on and off all winter and a tornado went through our town in March!  Tomorrow is supposed to be 57 with thunderstorms, snow and wind gusts up to 40 mph and then drop to 22 at night!  Hopefully the roads aren't to icy come Thursday morning!

This is our front yard so far:
Lots of water and plenty of ice still on the driveway!
