Mexican Tuna Patty with Corn and Black Bean Salad

Mexican Tuna Patties

6 cans of tuna in water drained
4 eggs
1/2 C salsa
1 C gluten free bread crumbs
1/2 onion diced
1/4 C cilantro chopped
1 C shredded Mexican cheese
Juice of one lime

Mix all ingredients together.
Spray broiler pan with olive.
Form mixture into patties and place on broiler pain (I made 8 patties).
Broil about 7 minutes on each side.

Can be placed on a bun or left by itself.

Corn and Black Bean Salad

4 C. frozen corn (thawed)
1 can low sodium black beans (rinsed & drained)
1/2 onion diced
1/2 C salsa
2 tbs lemon or lime juice
hand full of cilantro
1 tomato diced

Mix all ingredients together and serve.
